Cookie Butter Bars

These Biscoff Cookie Butter Bars are rich, buttery, and just a little over the top—in the best possible way. A soft brown-sugar cookie dough, lightly spiced with cinnamon, sandwiches a thick layer of creamy Biscoff spread, with optional white chocolate chips adding extra sweetness. Crisp and golden on top, soft and gooey in the middle, they’re an easy dessert that tastes far more decadent than the effort involved.

  1. Putting it all together

    Preheat the oven to 350 degrees. Spray a 9” x 13” pan with non-stick spray and set aside.

    In the bowl of a stand mixer or with an electric hand mixer, cream together the butter, brown sugar, and granulated sugar until light in color and fluffy in texture. This will take about 2 minutes.

    Scrape down the sides and add in the egg and vanilla. Mix until well combined.

    Add the flour, baking soda, and salt. Mix until incorporated and add the white chocolate chips.

    Once a soft dough has formed, press half of the dough into the bottom of the prepared pan.

    Using a spatula or spoon, spread the cookie butter evenly on top of the dough.

    Crumble the remaining cookie dough over the cookie butter layer and press it in slightly.

    Bake in preheat oven for 15-17 minutes, or until the top is golden and set.

    Allow the bars to cool completely before cutting and serving.
